What we did
After scoping the project, we identified multiple questions that were answered during the curse of the study:
- What agents are used for incorporating the clean label approach? Combinations of agents like starches plus gums which would carry a clean label with a higher degree of functionality in a system.
- What are other functionalities, beyond viscosifying? What are the functionalities, such as emulsifiers, gelling agents, film-formers, binding agents, coating, and encapsulation provided by the agents? What are the new functions for existing agents with “chemical-free” modifications?
- What are the improved processes (for e.g. solvent-free extraction) for preparing/extracting clean label agents?
- What approaches food manufacturers are taking to appeal to consumers and their trends?
- Trends based on the answers to the above points can help to predict technology growth in the future. What solutions are available for clean label-related problems? What will be the future of clean labels based on manufacturers' activity on the agent deck or focus on sustainability, low-carbon, natural, and organic?
